Suman Moron

Despite its unfortunate name, you would love the scrumptious suman moron.

Moron is a sticky rice cake with milk and chocolate flavors and is a native delicacy in Tacloban, Philippines. This smooth rice cake is made up of the different types of rice cooked in coconut milk, cow’s milk, and cocoa powder.

It is also reasonably easy to make, so if you want to try it, here’s an easy suman moron recipe for you to follow.

Suman Moron Recipe

Ingredients:

Chocolate Mixture

  • 1 ½ cup rice flour
  • ¼ cup glutinous rice flour
  • 1 cup coconut milk
  • 1 cup brown sugar
  • ¼ cup chopped roasted peanuts
  • 4 tablespoons cocoa powder
  • 1 teaspoon vanilla

Creating Suman Moron

Milk Mixture

  • 1 1/2 cup rice flour
  • 1/2 cup glutinous rice flour
  • 1/2 cup evaporated milk
  • 1 teaspoon vanilla
  • 1 cup coconut milk
  • 1 cup white sugar

For Wrapping

  • Banana leaves
  • Cooking twine

Instructions:

Milk Mixture

Rice Flour

  • Mix the two types of flour in a bowl.
  • In a non-stick pan, add the rice mixture, white sugar, evaporated milk, coconut milk, and vanilla.
  • In medium heat, stir the mix until thick and smooth.
  • Transfer into a plate and set aside to cool.

Chocolate Mixture

  • Mix the two types of flour in a bowl.
  • In a non-stick pan, pour the rice mixture and add the coconut milk, brown sugar, cocoa, vanilla, and peanut.
  • Turn the heat to medium, and stir constantly until oily and smooth.
  • Transfer into a plate and set aside to cool.

Wrapping and Steaming

Cooking Suman Moron

  • Prepare the leaves for wrapping: brush them over with butter or margarine to keep the suman from sticking.
  • Take a tablespoon of chocolate mixture and roll into a ¾-inch tube shaped by hand.
  • Do the same with  the plain milk mixture.
  • Place both tubes side by side and twist to form a thicker, two-colored roll.
  • Place the roll on the banana leaves. Roll and tie with a string on both ends to secure.
  • Steam for half an hour in a double boiler container or steamer.

Cooking Tips

  • Before rolling the milk flavor into a tuber, you can also add cheese for additional flavor.
